Makaseeh.rek, Macaroni Made by UNAIR Students Without MSG and Gluten

Five teams from Universitas Airlangga (Unair) managed to get funding from the 2022 Entrepreneurial Student Development Program (P2MW) organized by the Directorate of Learning and Student Affairs Kemendikbudristek. One of the teams that passed the funding brought a macaroni product without MSG and gluten named Makaseeh.rek.

Makaseeh.rek is a healthy snack culinary business that was established in 2021 with the slogan "Healthy is more than Tubi". This business started with complaints about the difficulty of finding healthy snacks, especially macaroni.

Macaroni currently circulating tends to have a flavor that is too thick because it uses MSG and also contains gluten because it is made from wheat flour. The content is certainly not good for health, especially for people with celiac disease or gluten intolerance, children, and the elderly.

Makaseeh.rek chooses the raw material in the form of white sweet potato which contains high fiber so that it can maintain smooth digestion. In addition, white sweet potatoes also have benefits for lowering blood sugar levels in diabetics to cope with stress because they contain vitamin B5 or pantothenic acid, and so on. The white sweet potatoes are then processed into macaroni without MSG, gluten, preservatives, and coloring.

Trial and Error Makaseeh.rek

On the way to realizing the product, the Makaseeh.rek team encountered a challenge that the manufacturing process was actually more difficult than expected. The recipes available mostly use wheat flour that contains gluten.

"We also tried various types of flour that did not contain gluten, but instead produced cireng, sticks, charred cakes, bagelen, crackers, etc. In addition, making macaroni forms was also quite difficult," explained Team Leader, Tazkia Ibnatiar Rahma, quoted from the Unair website. , Saturday, October 15, 2022.

In addition, Tazkia also explained, making healthy macaroni actually requires a higher cost to maintain quality. This is what ultimately motivated Makaseeh.rek to participate in P2MW 2022.

“Through P2MW 2022, we get funding that allows Makaseeh.rek to develop products such as improving health quality and market expansion. Then through mentoring, we can gain new knowledge in growing startup businesses,” he explained.

Increase Efficiency

Tazkia explained, after getting funding from P2MW, Makaseeh.rek will focus on increasing the efficiency of the production process so that it can produce products faster with more quantities. In addition, it is hoped that Makaseeh.rek can also expand the market by establishing more partners and continuing to innovate flavors.

“The hope is of course that we can expand into new products while still carrying the basic concept of no MSG, gluten, preservatives, and dyes. Also, of course the concept is made from sweet potatoes," he explained
